Foods are determined to be alkaline or acidic based on the pH effect they have on urine. A healthy diet balances the intake of alkaline foods and acidic foods, preventing bodily fluids from becoming too alkaline or too acidic.

Significance

The pH formula categorizes the strength of hydrogen ions within a substance, with neutral substances equivalent to a pH of 7. Alkaline foods range above neutral, versus acidic foods ranging below.

Identification

Foods such as meat, dairy, whole grains and nuts produce an acidic ash when digested and eliminated through urine, versus alkaline foods such as fruits and vegetables that generate an alkaline ash.

Benefits

Foods close to a neutral pH of 7 are classified as alkaline and acidic foods such as corn, brown rice, soybeans, peas, honey, almonds and tofu, balance pH levels when consumed regularly.

Considerations

Renal disorders can occur due to acid and alkaline imbalances, as acidic diets lead to uric acid and cystine kidney stones, whereas alkaline-rich diets promote calcium and phosphate kidney stones.
