Ener-G is an egg yolk substitute beneficial for diets that are egg, casein, dairy, gluten, nut, soy and yeast free. Mix 1½ teaspoons of Ener-G Egg Replacer with two tablespoons of water for each missing egg. A recipe that calls for an egg white should be mixed the same as one egg. Mix 1½ teaspoons of Ener-G with one tablespoon of water for each missing egg yolk. Mix Ener-G separately before adding it to the recipe.
