The misunderstanding that causes some people to think that eggplant is high in cholesterol comes from the way that eggplant is prepared. A dish like eggplant parmesan will be high in cholesterol if it’s made will full-fat cheese.

Eggplant is rich in antioxidants, which are important in cancer prevention.

Eggplant contains oxalates, which can become concentrated in body fluids. People with a history of kidney or gall stones should limit their eggplant consumption.

Eggplant is low in calories. Unpeeled eggplant is a good source of fiber, and it also contains phosphorus, potassium and folate.
